The Ghost Pepper, or Bhut Jolokia (hybrid of Capsicum chinense and Capsicum frutescens) is a south Asian pepper that was considered the hottest pepper in the world from 2007-2011 at around 1 million Scoville Heat Units. With an intense flavor, the dried pepper lends itself well to both sweet and rich foods (including chocolates and other candies). This very hot sauce creates a very balanced flavor followed shortly by very potent heat. It is a very versitile sauce and can go on almost any food.
