The Aji (Capsicum baccatum) is a South American variety with an astounding range of flavor and looks. This very mild sauce has both tangy and rich notes and is very versitile as a condiment, going well with almost all foods. It's a perfect addition for those "I don't do hot" people. Depending on what is available, this sauce may contain Aji Amarillo, Aji Crystal, Aji Dulce, Aji Limon, and/or other Aji varieties, so the flavor may change slightly from batch to batch.
